1 lb ground beef
1 large can tomato juice (48 ounces)
3-4 tomatoes
1 large onion, chopped
1-2 cloves garlic
1 bay leaf
1/2-1 tsp oregano
1 tbsp coconut oil
salt and pepper to taste
1. Brown onion and garlic with oil in heavy skillet. Remove, and brown meat in same pan.
2. Transfer meat and onion to large pot and add tomato juice, bay leaf, oregano, and seasonings.
3. Simmer to desired thickness; this may take 1 hour or longer.
*Use spaghetti squash or zucchini for the noodles.
