Cut the spaghetti squash in half lengthwise. Steam in a steamer until just tender. Do not overcook as squash can become to soft and watery.
Lift out strings of "spaghetti" from squash with a fork. Serve smothered in hot spaghetti sauce.
Or…
Make zucchini noodles if spaghetti squash is not available.
6-8 medium zucchini
Peel zucchini and remove stems. Use a mandolin to make noodles.
Pile the zucchini noodles on a buttered baking sheet and cook in a preheated 215 degree oven for about 25 minutes. The objective for the low temperature is to cook the zucchini while evaporating much of the excess water as possible.
