This saved us when Tanner first started the diet and his food choices were very limited. This was his treat of choice!
Ingredients:
20 medium apples (honey crisp recommended)
1 1/4 cups water
1/2 tsp salt
1/2 cup honey
1 tbls lemon juice (less if using tart apples)
About 1/2 inch scrapings from vanilla bean
1 tsp cinnamon
Instructions:
1. Peel, core, and slice apples.
2. Place all slices in crockpot and pour water over them. Sprinkle the salt, cover, and cook for 6 hours.
3. After 6 hours, stir in honey, lemon juice, vanilla, and cinnamon. If you like smooth applesauce, use immersion blender to smooth it out. Or, leave as is for a few small apple chunks.
Stores nicely in freezer. :)

Cashew Baked Zucchini
My mom made these and Ladd and I couldn't get enough. So delish!
Ingredients:
1 large zucchini
1 cup cashew flour
1 egg
pinch of salt
pepper to taste
Directions:
Preheat oven to 450 degrees.
Slice zucchini into circles.
Whisk egg.
In a separate bowl, mix dry ingredients.
Dip slices of egg in zucchini and let any excess egg drip before you move on to the next step.
Coat egg covered zucchini in cashew flour and place on a baking tray. Bake on each side for about 6-8 minutes until each side is golden brown.
Serve immediately. Yum!

Green Beans
Ingredients:
fresh green beans (washed and trimmed)
2 tablespoons coconut oil
juice from half a lemon
a little garlic and salt
Steps:
1. Boil a medium pot of water
2. Toss green beans in boiling water for 4 minutes
3. Once they have turned bright green, drain the beans in a colander.
4. While drain, put remaining ingredients in pot and stir. Add green beans to pot, stir, and enjoy! :)

Mashed "potatoes"
1 large cauliflower, cut into pieces
1/4 cup butter or coconut oil
salt, pepper to taste
Cook cauliflower just until tender in boiling water, drain.
Puree cauliflower in blender.
Add oil, salt and pepper, and blend thoroughly.
Serve warm!
