We finally started making the SCD yogurt. I was so afraid to do any dairy because it did not digest well for Tanner, but after reading more about it, and knowing Tanner needs to get more probiotics in him, I made some. So easy. Since the yogurt ferments for 24 hours, the lactose is completely broken down and he had no trouble with it. Anyways, Tanner wanted a yogurt parfait for breakfast one day, and this is what I came up with!
Ingredients:
1 cup SCD yogurt mixed with 1 tbls honey
Chopped Berries of choice ( we used frozen blueberries because it was all we had at the moment!)
Granola:
1/4 cup chopped almonds
1/4 cup chopped cashews
2 tbls shredded coconut
A sprinkle or two of cinnamon
1.5 tbls liquid honey (I needed to melt my raw honey to accomplish this)
Mix nuts, coconut, cinnamon and honey well to make granola. Put in fridge for just a few minutes to cool honey if needed.
Find a tall glass. Put a layer of granola, then berries, then yogurt. Repeat layers until glass is full. I pitted a cherry and topped with cherry. A delicious way to get your probiotics :)
