Spanish Rice Bake

Ingredients
1 pound lean ground beef
1/2 c finely ground onion
1/4 c chopped green bell pepper
1 (14.5 ounce) can tomatoes
1 c water
3/4 c uncooked rice
1/2 c chile sauce
1 tsp salt
1 tsp brown sugar
1/2 tsp ground cumin
1/2 tsp Worcestershire sauce
1 pinch ground black pepper
1/2 c shredded cheddar cheese
2 tbsp chopped fresh cilantro

Directions
1.  Preheat oven to 375 degrees
2.  Brown the ground beef in a large skillet over medium high heat.  Drain fat and transfer beef to large pot over medium low heat.  Stir in the onion, green bell pepper, tomatoes, water, rice, chile sauce, salt, brown sugar, cumin, Worcestershire source, and ground black pepper.
3.  Let this simmer for about 30 minutes, stirring occasionally, then transport into 2-qt casserole dish. Press down firmly and sprinkle with the shredded cheese.
4.  Bake at 375 degrees for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped cilantro.

Basil Chicken over Angel Hair

Ingredients
1 (8 ounce) package angel hair pasta
2 tsp olive oil
1/2 c finely chopped onion
1 clove garlic chopped
2 1/2 c chopped tomatoes
2 c boneless chicken breast halves, cooked and cubed
1/4 c chopped fresh basil
1/2 tsp salt
1/8 tsp hot pepper sauce
1/4 c parmesan cheese

Directions
1.  Cook Pasta
2.  In a large skillet, heat oil over medium high heat.  Saute the onions and garlic.  Stir in the tomatoes, chicken, basil, salt, and hot pepper sauce. Reduce heat to medium, and cover skillet.  Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
3.  Toss sauce with hot pasta to coat.  Serve with parmesan cheese.

Chocolate Dessert

1 avocado
1/2 cup almond milk
4 tbsp of cacao powder
6 medjool dates pitted
1/2 tsp vanilla
 Berries of choice

Blend all ingredients except berries.  If needed, add a little more milk.  Top with berries.

Avocado Chocolate Mousse

2 ripe avocados
1 ripe banana
5 tbsp raw cacao powder
2 tbsp raw honey
1/4 c almond or coconut milk

Blend everything together until consistency is smooth and velvety.  Serve immediately.

Easy Microwave Bread

Ingredients
2 eggs
3/4 cup water
1/2 teaspoon baking soda
1/4 teasoon salt
green herbs, if desired
almond flour, enough to bake a batter.

Instructions
1. Mix ingredients together and stir well.

2. Scrape batter into a microwaveable bowl or dish with a flat bottom and vertical sides.

3. Microwave about three and a half minutes (microwaves vary).

4. Turn out on a board to cool. If you want, you can put it back in the dish upside down, and microwave again for one minute. This makes the bottom side drier.

5. Cool a little and cut sideways into slices. This will be firm enough to make a bacon, lettuce and tomato sandwich. You can also cut slices and toast them.

6. Keep unused bread wrapped and in the frig. It will keep well.

Gravy

Though not as heavy as traditional gravy, this recipe will thicken a bit as it cools to room temperature.

Ingredients

  • 3 tablespoons grass-fed butter, ghee, bacon fat or coconut oil
  • 1 1/2 cups leftover pan drippings from your turkey
  • 1 1/2 cups chicken or turkey stock
  • salt and pepper to taste
  • 2-3 tablespoons grass-fed gelatin
Method:
Add drippings, broth, salt and pepper to a medium-sized sauce pan and bring to a boil. Reduce heat and simmer for 20 minutes, stirring often. Just before serving, add 1 teaspoongelatin to cold water and let sit for one minute. Add to gravy and mix until dissolved. Continue process using 1/2 tsp increments until gravy reaches desired thickness (it will thicken more as it cools to room temp). Stir in butter/ghee/bacon drippings/coconut oil and allow to cool a little before serving.

Grain-Free Homestyle Stuffing

Note: This serves a small family of 2-3. Double or triple the recipe as needed.

Ingredients

  • 3 ½ cups onion, diced
  • 2 ½ cups celery, diced
  • 1 cup apple, cored and diced
  • 1/4 cup dates, chopped into small pieces (raisins or dried cranberries would also be good)
  • 2 cups almond flour
  • 2 teaspoons sage
  • 2 teaspoons thyme
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 tablespoons butter, ghee or coconut oil
  • 3 eggs, whisked

Instructions

  1. Grease a medium-sized baking dish
  2. Add 2 tablespoons butter/ghee/coconut oil to a saucepan and warm over low/med heat.
  3. Add onion, celery, apple and herbs and saute over medium heat for 5 minutes. Remove from heat.
  4. In a large bowl, add almond flour and dates and mix. (Note: If you have a cast iron orXtrema pan that can go from stovetop to oven, you can just mix everything in the pan.)
  5. Add the lightly beaten eggs to the bowl and mix well.
  6. Add mixture to baking dish and bake at 350F for 45 minutes – 1 hour
